Our grapes are picked at full maturity - both analytically and hedonistically. Fermentation occurs in half-ton bins and stainless steel tanks with four daily punchdowns or pumpovers for maximum extraction. Small containers allow for a moderately warm fermentation to preserve the intense fruitiness of both varietals. Bottling occurs in the late summer, and the wines are released at the beginning of the following year.
